Fried rice is omnipresent in Vietnam. It is often a so-called “rest meal”. This means that various ingredients that are left in the fridge are mixed with boiled rice and fried. Garnish with some spices and the fried rice is ready. Com Chien is a very spicy and hearty variation of the classic fried rice. The reason is the Vietnamese sausages you should get in the Asian shop. If you don’t find what you are looking for, you can also use Chinese sausages or classic German sausages. It is important that you sauté Com Chien properly and season well.
The preparation time of Com Chien depends on how much you have already prepared. Especially the rice needs some time, but you can prepare it the day before. Com Chien tastes even better when the rice comes cold from the fridge. It then has a very special taste and a pleasant sticky consistency, which is perfect for Com Chien. Otherwise, the browning and preparation does not take very long. You should expect about 15 to 20 minutes. The bigger your wok, the faster the rice and other ingredients will fry. The most important thing is that you are not too impatient with the eggs. Otherwise, you will only get mixed rice with egg, but the egg could not be completely through. Otherwise, our recipe is designed for four to six people, depending on how hungry you are.

- 300 g frozen vegetables
- 800 g cooked rice
- 1 tablespoon mushroom spice
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 0,5 teaspoon sugar
- 0,25 teaspoon pepper
- 2 spring onion

Start by preparing the ingredients so that everything can go very quickly afterwards. Peel the garlic and chop it into fine cubes. Then cut the sausages into fine slices. Alternatively, you can also use Chinese sausages. Thaw the frozen vegetables and let them dry. Beat the eggs and whisk them. Now just peel the onions and cut them into thin rolls.

Heat the oil in a large wok over medium heat. Add the garlic and stir until you hear a pleasant aroma. This takes about 30 seconds. Now you can add the sausages and fry them for two to three minutes.

The next step is to add the frozen vegetables. Of course, you can also use fresh vegetables such as carrots, courgettes and the like. However, the recipe with frozen vegetables is much easier. Cook and fry the vegetables for another two to three minutes.

Use the stirring spoon to carefully free a corner of the woks where the eggs now land. Carefully stir the eggs without mixing them with the remaining ingredients. Only when the eggs are completely cooked can you mix them with the other treats.

Now add the cooked white rice to the wok. Use a wooden spoon to divide coarse chunks and make sure that the mixture is uniform. Now you can season the rice. Mix in the mushroom spice, salt, pepper, sugar and garlic powder. Stir everything and combine to a delicious mix.

Now stir until the rice has taken on a pleasant colour. When the time is right, you can serve Com Chien. Place the rice in a small bowl with the sausage and vegetables. Top the rice with the spring onions and serve Com Chien directly.
