Nước mắm dấm – a special fish sauce

Nước mắm dấm is a special fish sauce, which is served with various dishes. It can often be found in combination with spring rolls, various grilled meats, salads or vegetable pans.

Ingredients

  • warm water
  • sugar
  • lemon juice
  • fish sauce
  • garlic
  • fresh chillies

Instructions

  1. Take the warm to lukewarm water and mix it with lots of sugar and lemon juice. Nobody in Vietnam can tell you the exact mixing ratio, so it takes a little practice to prepare this sauce. Once you have achieved the desired taste, add pure fish sauce to give the dip the desired salinity.

  2. After the 4 ingredients have been arranged according to taste, fresh garlic is cut into small pieces and added. Furthermore, you can, but don't have to, cut fresh chilli peppers into fine rings and add them.

  3. After the sauce is well done for one hour, stir it again briefly and serve it.

  4. Whether the sauce is right depends on the taste on the one hand, but on the other hand the Vietnamese also recognize this directly by the golden colour that the sauce must have at the end.
