Sweet and Sour Sauce

In Vietnam, too many dishes are served with sweet and sour sauce. Especially with spring rolls you can find them quite often, beside the fish sauce. It is not used as a sauce as we know it, but rather as a dip. Spring rolls, etc. are stipped into the sauce and then eaten directly.

Ingredients

  • 250 g strained tomatoes
  • 100 g sugar
  • 1 chopped garlic clove
  • 1 carrot
  • 1 onion
  • 1 bell pepper
  • 1 can of pineapple, in pieces
  • 3 tablespoons soy sauce
  • 2 tablespoons cornflour
  • 1 teaspoon ginger, grated
  • 1 teaspoon vinegar
  • some pineapple water

Instructions

  1. First cut the pepper, onion and carrot into fine pieces. These pieces are then fried in a wok with a little oil for about 2-3 minutes.

  2. Open the pineapple can and let the pineapple water drip off into a bowl (we still need it).

  3. Now stir the starch into some water and put it in a pot with the other ingredients.

  4. Pour the pineapple water on top and put it on the stove.

  5. After everything is cooked up, let the mixture simmer for about 3 minutes on a low heat.

  6. Finally, add the fried vegetables and let them heat up again.

    If the consistency is still a little too thin, you can stir in a little more cornflour, add it and bring to the boil again.
